Located right above Apollo Coffee Bar, the roastery studio was created as a dedicated environment for research, development and daily operational planning. The space functions as both a collaborative workplace and a testing studio, supporting the team in developing new ideas, refining operation workflows and experimenting with future developed concepts behind the scenes.

The interior adopts a minimalist palette of crisp white surfaces complemented by rich dark brown furniture and bespoke carpentry. Warm ambient lighting introduces depth and comfort, creating a balanced environment that feels both professional and welcoming. Flexible workspaces, collaborative meeting areas and practical workshop zones allow the team to move seamlessly between planning, discussion and hands-on experimentation.
